Boarding school breakfast
She loved reading books about British boarding schools, and
fantasized about attending one. Her granny knew England was a bit too far, but
at least the child could have a very English breakfast of tea, toast and orange
marmalade.

Wash oranges & lemons
removing the stem parts but leave fruits whole. Put whole fruits in a large
enamel kettle; cover with water. Cover & bring to a boil; simmer until a
fork will pierce fruit easily. Remove fruit to cool completely & set aside
kettle with liquid. When fruits are cool, cut in half lengthwise & make
very thin slices. Deseed & put fruit into the liquid & boil for 10 min.
Next the juice has to be strained. Add sugar to fruit, stir until dissolved
& continue boiling. Keep stirring so that there is no scorching until
juices start to thicken & temp reaches 105*C. Remove from heat & skim
off foam. Pour immediately into hot sterilized jars keeping about ½” head
space. Place seals on & adjust rings.
